Have you kicked off the year with a set of healthy-eating resolutions?

I eat a fairly balanced diet and don’t overindulge too much but there’s always room for improvement and I would like to add more greens to my diet this year.

I never tire of Christmas flavours and to make the holidays last that little bit longer, I put this salad together and made a delicious orange and poppyseed dressing that took it to the next level. Salads are all about the dressing really, aren’t they?
